Vanilla Extra

VANILLA EXTRA is a mix for the production of various types of yeast-raised cakes

These are yeast buns, butter breadsticks, braided sweet bread and bundt cake with dried fruits and nuts. Thanks to perfectly selected ingredients, you receive a product with a distinct butter-vanilla flavor and a long shelf life of the finished product.

Method:

Knead all the ingredients of the dough for 3 minutes at slow speed and 5 minutes at high speed. Allow initial fermentation for 10 min, then form and subject to final fermentation for about 60 min at 35 °C and 85% humidity.

Baking: 170 – 180°C

Baking time: approximately 12 - 15 minutes.

Method:

Knead all the ingredients of the dough for 3 minutes at slow speed and for 4 minutes at high speed. Then weigh the portions of 1,800 g and allow initial fermentation for 10-15 min. After initial fermentation, form braided breads or butter buns and ferment for about 60-80 min. temp. 35 °C and humidity 80-85%. Before baking, spread with egg whites, garnish with crumble.

Baking: 170 – 180°C

Baking time: approximately 12 - 20 minutes.
