Poles in the Grand Finale during the 15th edition of the Coupe du Monde de la Patisserie

The biennial Grand Finale of the most prestigious confectionery competition in the world, the Coupe du Monde de la Patisserie, will take place for the 15th time on 27-28 January 2019 at the Sirha fair in Lyon. The best team will be awarded with a gold medal and a check for 21 thousand euros.

This wonderful event celebrates its 30th anniversary. During this jubilee edition there have been 4 continental selections in Asia and the Pacific, Latin America, Africa and Europe.

55 nationalities have taken part in the sweetest struggle to be able to present themselves in the last game on the confectionery international arena. We are even more proud because Poland will have its representatives during the Grand Finale in January.

Our excellent confectioners - Michał Doroszkiewicz and Marek Moskwa presented themselves in style in Turin in June 2018 during the European selection. Their determination and positive energy and above all the experience and professionalism resulted in getting through to the Grand Finale as one out of eight European teams. Today, they are preparing for Lyon in an enlarged lineup, which is required by the regulations.

The Polish team will also include Damian Wiśniewski who will be responsible for making the ice sculpture.

In Lyon, the Poles will compete with the following national teams: Algeria, Argentina, Australia, Belgium, Brazil, Chile, China, Egypt, Italy, Japan, Malaysia, Morocco, Mexico, Singapore, South Korea, Sweden, Taiwan, Tunisia, the United Kingdom and the United States.

GRAND FINALE - GREAT CHALLENGES

Turin was just a foretaste of the final difficult confectionery game which will take place in January in Lyon. Within 10 hours each of the teams will have to prepare: 19 vegan desserts on a platter, which is a new task this year. Thus, the Organizers pose a new challenge to the competitors - creating a dessert that does not use any product of animal origin. This is certainly not a small obstacle that should stimulate the creativity of the participants, because they will have to forget about ingredients that often make up the taste and texture of desserts.

Moreover, the teams will have to create: 3 chocolate cakes in which honey should be used to prepare the sponge cake. In this way, the organizers want to pay attention to the importance of the work of bees in the pollination process. This task results from the cooperation with the National Union of Beekeepers in France (UNAF), for whom the protection of bees is one of the priorities.

However, this is not the end of tasks to be completed by our team. The last one is to prepare 2 frozen cakes and one item made of caramel, chocolate and ice. And here is also another novelty, which is making at least one transparent element (25/35 cm) of blown sugar included into a caramel item. The Committee insists on the use of manual techniques.

This year, the leitmotif which was imposed by the Organizing Committee is nature, flora and fauna, and based on this topic, our confectioners have developed original recipes and created a whole, coherent concept of the required creations.

Certainly the 15th edition of Coupe du Monde de la Patisserie will bring many surprises on the occasion of the 30th anniversary, which will be a great opportunity for celebration, but we will see for ourselves soon.

After many years, the Poles return to the global stage of confectionery. We strongly believe that in Lyon, our strong Polish team will prove their ability and present their amazing confectionery skills at the highest level.

Let's keep our fingers crossed for our "sweet" team, which includes Polish confectioners with many years of experience and extensive professional expertise: Michał Doroszkiewicz (Team Manager & Chocolate candidate), Marek Moskwa (Sugar candidate) and Damian Wiśniewski (Ice candidate), while Jarek Nowakowski (Team President) will sit in the international Jury.
