Improver recommended for the production of bakery products frozen before baking

Blue Dynamil is a unique improver recommended for the production of bread frozen before baking, with the maximum weight of portions of dough 400 g. it ensures increased dough resistance to freezing temperatures. Blue Dynamil restores the plastic properties of the dough, even when it is subjected to prolonged freezing and allows for early resumption of the fermentation process, even after a few months storage of the dough at -18°C.

  • Available units: Bag 25 kg
  • Dosage: 1.5–3% of used flour weight, i.e. 1.5–3 kg improver per 100 kg of flour (before addition of water mix with dry ingredients: flour, salt, etc.). The increase in dosage with extending the storage time and lowering the dough temperature in the range from -15 to -20°C. In the case when rye flour is used, maximum dosage must be applied
